Would I take Hernandez over Billy Price, Michael Jordan, or Alex Redmond? Yes.
But I wouldn't say he's better than XSF or Quinton Spain. He's probably on about the same level as both (so far).
I'd be willing to try him over Spain due to age though. He's 4 years younger.
I'd probably look to draft an OG on Day 2 and/or get a better one in FA though.

I had him as my #1 2nd round choice in 2018 after the first round (but I make up for it for wanting Orlando Brown in the 3rd Tongue), so I'm biased and think we could maybe get him to that point where he's a good player. 

But, unfortunately, career resurrections are tough pills to swallow when you need quality players immediately.

If he can be had for depth, sure. But don't rely on him as a starter.

That's tough, as he is in the final year of his rookie contract. You'd potentially be trading away a draft pick for a 1-year rental unless you can re-sign him. Or if he's bad in 2021, you just gave up a draft pick for a bad player.

As such, I'd go no higher than a 5th rounder, but I'd probably more likely go just 6th or 7th. I'm not sure why NYG would even want to move on from him though due to his low cap hit. He's set to make $3 mill in 2021 with $875k in dead cap, so it's really only $2.1 mill in savings.

I'd probably just be willing to wait for him to get cut if NYG wouldn't take a 7th rounder.
