They would spend all day making fresh pasta, filling for ravioli, sauce (not gravy!), etc. I do need to learn for myself one of these days though... My specialty are Cutlets (Milanese-style, being that my parents are from Milan, either chicken or veal), any Pasta done in Carbonara or Alfredo (my Alfredo is BOMB) and my Risottos are pretty good too (though the best one I ever made was more French than Italian). And I'll give you that it can be time-consuming; absolutely, but it doesn't go near French cooking; I made a dish that Kyoko Kagata (damn good female chef from Japan, who specialises in French cooking) made on Iron Chef, against Chen Kenichi; I didn't have the measurements, so I did it all by eye. I had to make: Veal Stock (took one night), Fond du Veau (took another night, which used almost all of the Stock), then White Veal, stuffed with Foie Gras, Truffles, Cremini Mushrooms and Colossal Shrimp (Prawns) (this mixture, sans veal, was cooked in the Fond du Veau), wrapped in breadcrumbs and truffles, pan-fried in butter. The whole ordeal took me a combined 13 hours and around $180.00 lol; by far the best thing I've ever cooked (my dad was nearly in tears and he is a master chef himself). Last year it could have been 3rd and 12 and it was almost automatic other team would convert. |
