1.) Since I was already making one trek to Vegas I'd probably go somewhere else for my other trip. Sportsbooks have been opening all over (I think it's legal in like 13 states now but don't quote me on that). It might be cool to check out another city with a Casino.
Between the flights and rooms, it would save a few thousand dollars, so it makes even more sense to just do that.

I know you said you wanted to bet NFL but New Years Day bowl games would be a blast to bet. And if you're already getting in some NFL bets in another trip it might be fun to mix it up. Plus, you'd be have college basketball and the NBA in play if you wanted some more options. I'm sure you'd have all sorts of things to do there during that time too. I gotta imagine they do a lot of cool shit for New Years.Yeah, that would be a blast, but I don't follow NBA or college enough in that way to bet it. I'm just more of a casual fan. I did bet the game 3 of the NBA Finals (and won) because my friend, who's a degenerate gambler (he's one of the 4 that I'm going with for the Bengals weekend), put $2,000 on it, so I felt pretty confident betting (not nearly as much, obviously).
Also, New Year's would probably be PACKED, which would be an obvious problem for me.

I'm assuming rates for hotel and airfair are cheaper this time of year, coming off of a summer and with school starting. If you go this route, why no go for week 1, to kick off the season?
I might do that because I'm in a poker group on Facebook and they're having a group meet-up out there from something like 10th to the 13th. The problem with that is that they'll just be playing poker a lot, which I don't really want to go to Vegas for poker and I also don't know if I'll have presentations scheduled that Friday or Monday and I just don't want to miss any opportunities because they all mean so much to me, especially since I've had so few since Covid.
I also don't want to be out there on the anniversary of the wreck (9/18), so I might have to just bite the bullet and go out on opening weekend and try and schedule presentations around it. They said I don't have to play poker if I don't want to because it's more to get the group together (players from all over and I only know a few in person), but sportsbooks might also be packed on opening weekend.
Thanks for the advice!
