They aren't doing it just because "everyone else does it". It's a part of every DC's repertoire, like a cover 3 or cover 2. It is a method to simulate a blitz. Every team in the NFL, many teams in college and even high school teams do it. Sometimes, your top guy ends up being the drop man. It's just how it is.
