The old saying is that to be good on defense, you need to be strong up the middle. Meaning good DTs, strong LBs, and athletic, hard-nosed Safeties. It still rings true today, and consequently those positions are cheaper to have "good" at than edge rushers and "lock down" CBs.
Maybe it's because safety is considered a low priority position....?
