Rush used to fall into this category, not sure if they do anymore. Can't think of a better trio of musicians.
If you like progressive metal, Ayreon is worth checking out. It can come across a little cheesy, but it's very good. IMO at least.
Gabriel Era Genesis is great.
King Crimson is great and deserves more attention.
Anything Mike Patton does.
