Not sure which one I'd like more.

I personally like the First Pick mock the best.  Tough to pass on Mims at 33.  I think Wilson is a reach, but I do like him overall as a prospect.

Yeah, Mims was impossible to pass on. I listened to Matt Minich's podcast interview with Austin Gayle of PFF. I highly recommend it. Mims has the highest WAR value.

Is all the support for the Fan Speak mock due to Baun being the pick at #33?

Personally, I went with the Fanspeak mock not just because it has Zack Baun at #33, but also because it has Solomon Kindley, rather than Cordel Iwuagwu.  Though neither of them has a great scouting report, I'd take Kindley due to his size and him being a better straight ahead blocker.  To me that makes him at least worth having for short yardage/goal line situational use backup.
