I often tip my servers in cash because I know it's taxed. If it's via credit card, it's logged automatically, but with cash, it at least gives the server an opportunity to not be taxed on it.
One of my friends who was a bartender told me that years back. They prefer tips in cash. So thats what I always try to do.
I imagine a large portion of tips go untaxed already because people are “smart” (aka lying to dodge taxes).
The rise in electronic transactions has probably put a major dent in that though.
