I think you're neglecting to consider the future earning potential of that 3rd contract. He get's his deal done this year, and he can be up for a new deal at 28. The longer he waits, the less lucrative that 3rd contract might be.
28 vs. 29 might seem like no big deal, but the way teams handle third contracts and player age, it's not insignificant.
I don't see any WRs next year getting more money than Jefferson, CeeDee, Hill, got this off-season, so the market is pretty much set. There isn't anyone that's going to increase the market, so he wants his deal ASAP because that means he can get to his 3rd contract sooner.
