The "elephant" OL works just as well as the athletic, precision OL, as evidenced by the Cowboys dynasty years. Emmitt Smith had no issues with hitting holes behind big Nate Newton and company. The team led by Zac Taylor wants to focus on being pass first and doesn't have the time for even a great OL coach to implement a wide zone scheme, even if they did bring in the correct player personnel. Might as well give Joe and the RBs a fighting chance at hitting holes straight forward.

The "elephant" OL worked 30 years because a)pass rushers were less athletic and b) teams used a FB to get a hat on second level defenders.  

Booker struggles in pass pro due to his poor athleticism.  Yeah, we can run behind him on the handful of 3rd and shorts that come up each game, but you sacrifice pressure up the middle on 30+ dropbacks a game.
