You don't know if he would have been picked later in the 2nd round. You're just speculating. You don't even know if he's really going to be 3rd string. He could be out there for most snaps. How do you know that we aren't going to have 2 TE sets and run the ball/play action a lot? You have no idea how Taylor wants his team to play.
