I usually just wait until the Steelers draft someone, watch a 5 minutes highlight reel and give the pick an A+.

We record a lot and I mean ALOT of college games because we travel for work and have season tickets to WVU which kills most Saturday games for us.

An alternative might be to find analysts online who focus on a particular school and will post film clips. It would be a pain though to collect all those sources together, especially as a hobby rather than as a full-time job.
I personally will continue to read scouting reports, cross-check claims across various scouting reports to determine what might be more "true," and then search youtube for whatever clips I can find of a particular player. I don't have the time nor the interest to watch through hours of film like Draft Breakdown.
