So, which is it?

Is Macaroni and Cheese called "Mac" because Macaroni is abbreviated or is it called "Mac" because it's the first letter of each word?

Macaroni and cheese is not called "mac". "Mac" is just macaroni. "Mac and cheese" is macaroni and cheese.

Well if you say Mac N Cheese 

then it stands for Macaroni


Never ever have I heard it just called MAC  (those are big rig trucks)
